Look for plums that give gently under pressure with a natural waxy bloom on the skin. Queen Garnet is a summer variety — at its best when the stone fruit season is in full swing. Ripen firm fruit at room temperature and refrigerate once ready.

Eat fresh out of hand, halve and roast with honey and star anise, use in a tart or crumble, or simmer into a sauce for duck or venison.
