Look for a mango that gives gently under pressure with a fragrant, sweet smell at the stem end. Silky mangoes are a summer variety — ripen at room temperature and refrigerate once ready. Eat within a day or two of ripening for the best experience.
Slice the cheeks and scoop out the flesh, blend into a lassi or tropical smoothie, dice into a salsa for grilled fish or prawns, or simply eat over the sink on a warm day.
