The most useful fresh chilli in the kitchen. Medium heat, distinctive flavour and genuinely versatile across cuisines and cooking methods in a way that hotter varieties are not. Once you cook with fresh jalapeños regularly they become a staple you keep stocked.

At their best in the warmer months from November through April when domestic crops come in firm, vibrant and full flavoured. Available year-round with reliable quality across the calendar.

Slice into rings and scatter over tacos, nachos or pizza, dice finely into a fresh salsa or guacamole, pickle in vinegar and sugar for a condiment that lifts everything it touches, stuff and bake with cream cheese for a simple crowd pleasing snack, or blend into a hot sauce. They hold their heat through cooking and reward bold flavours.

Green jalapeños are firm and grassy with clean medium heat. Left on the plant to fully ripen they turn red, sweeter and slightly hotter. Both are worth cooking with depending on what the dish needs.

Look for firm pods with smooth glossy skin and no soft spots or wrinkling. A fresh jalapeño smells clean and sharp.
