Harris Farm Raw Potato Chips
These Pre-Cut hearty and creamy little spuds are a time saving dream. Hailing from the Mallee Region in Victoria, these tough little spuds survive volatile weather conditions. Farmer Peter Corcoran, a third generation potato farmer and owner of the Platinum Potato farm where these little beauties come from often temperatures of 47° at the beggining of planting season.
ROSEMARY OVEN BAKE POTATO CHIPS:
1kg HFM potato chips
1 large sprig of Rosemary chopped
1Tbsp olive oil
Salt and Pepper
Preheat oven to 240°C.
Drain and pat dry the potato chips (leave uncover in the fridge overnight for better results)
In 2 separate baking trays, spread the chips on equal amounts without over lapping, drizzle the olive oil, season with salt and pepper and sprinkle the chopped rosemary, toss well and spread on the trays.
Place into the preheated oven and cook for approx. 35 min or more if necessary, until golden brown and crispy.
Store below 5 degree C.
Once opened refrigerate in water
