COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Preheat oven 200 degrees. Prepare the pumpkin by cutting off the skin and removing seeds. Cut into rough 2cm chunks. Add pumpkin to a baking tray lined baking tray and drizzle with olive oil, season with salt and pepper and toss through. Cook in the oven for approx. 10 mins until soft.

    2. Prepare asparagus and broccolini by cutting off 3cm from the hard ends. Prepare the kale by deveining the stems and tearing leaves into chunks. Remove dill leaves from hard stems and finely chop. In a small bowl, mix all BUT two tablespoons of the crème fraiche, juice of half a lemon and dill. Bring a medium size pot of salted water to the boil.

    3. Remove pumpkin from oven and place in a blender, adding the reserved 2 tablespoons of crème fraiche and blitzing into a puree.

    4. Blanch the broccolini for approx. 3 mins. Drain and refresh with cold water. Pat dry with paper towel and place together on baking tray with asparagus, drizzled with olive oil and seasoned with salt and pepper. Set tray aside.

    5. Season salmon with salt, pepper and olive oil. In a hot pan, drizzle olive oil and sear salmon flesh side first for approx. 3 mins, turn and sear salmon skin side down for approx. 3-4 mins until skin is golden and crispy. Remove from pan into baking tray and cook in the oven, together with asparagus and broccolini, for approx. 5 mins.

    6. Cook the kale in the same pan used to sear the salmon and sauté for approx. 2 mins. Add salt and pepper then set aside. Plate pumpkin puree, sautéed kale, roasted greens and salmon, skin side up. Finish with dill crème fraiche and a good squeeze of lemon. Consume within 48 hrs.
