Australian cherries are at their best from December through January when cool-climate orchards in Victoria, New South Wales, and Tasmania hit peak ripeness. That is when a 2kg box is genuinely worth it.
Look for cherries that are deeply coloured, firm, and still attached to their stems. Store in the fridge and eat within a few days.
Put the box on the table and let people help themselves, serve alongside a cheese board, fold through a clafoutis or tart, or simply eat them by the handful. When Australian cherries are at their peak, very little else competes.
