Black America grapes are at their best from late summer through autumn when Australian and imported harvests hit peak ripeness. That is when the flavour is most concentrated and the texture most satisfying.

Look for bunches with firm, deeply coloured grapes and flexible green stems. Brown, brittle stems are a sign of age. Grapes should detach cleanly when pulled.
