Shepard avocados are a new season variety, typically arriving from March onwards when Queensland farms begin harvesting. That is the time to look for them.
Look for Shepards that give slightly to gentle pressure at the top. The skin stays green when ripe, so colour is not a guide. If still firm, leave on the bench for a day or two. Avoid any that feel mushy.
Slice through a salad, fan over toast, fold into a grain bowl, or use in anything where the avocado needs to hold its colour and clean texture once it hits the plate.
