Tomato Roma Each is the Italian-style plum tomato — firm, meaty, low in seeds and high in natural sugars that concentrate beautifully when cooked. The workhorse tomato for any serious sauce or roasting tray.
Look for firm, evenly coloured tomatoes with a deep red hue and no soft spots. Roma tomatoes are available year-round and are best stored at room temperature. Their low moisture content means they cook down faster and richer than round tomatoes.
Slow-roast with olive oil, garlic and thyme for a deeply flavoured sauce or topping, simmer into a passata or sugo, halve and blister under a grill, or use as a rich base for shakshuka or braised eggs.
