Banana Lady Finger is a slender, petite variety with a more intensely sweet, almost honey-like flavour than a standard Cavendish. What it lacks in size it more than makes up for in taste.
Look for fruit with a good yellow colour and a few brown speckles — that's peak ripeness for sweetness and texture. Lady Finger bananas are available year-round and ripen quickly at room temperature. Once at the right stage, move to the fridge to slow further ripening.
Eat fresh as a snack, slice over porridge or yoghurt, pack into a lunchbox, or mash into banana bread for a more intensely flavoured result.
