Ingredients:
- 2 Cups Superfood Nut Mix
- ¼ Cup Chia Seeds
- 1 Cup Rolled Oats
- 80g Butter
- 80g Honey
- 100g Dark Chocolate (70%)
- ¼ Cup Fine Desiccated Coconut
Method:
- Preheat the oven to 180°C.
- Place the superfood nut mix into a food processor and pulse a few times to break them down slightly.
- In a mixing bowl, combine the processed nuts with chia seeds and rolled oats.
- In a small saucepan, melt the butter and honey over medium heat until boiling. Stir and cook until golden brown (about 3 minutes).
- Pour the honey mixture into the nut mixture and mix thoroughly.
- Grease a muffin tray and divide the nut mix into 6-8 equal parts, reserving half a cup for later.
- Press the nut mixture into the muffin tray using a spoon (not too hard). Scatter the reserved mix on top without pressing.
- Bake in the oven for 10-12 minutes until golden. Remove and let cool for 15 minutes.
- In a small saucepan, fill it with ¼ water and bring it to a boil. Place a bowl on top and add broken chocolate pieces. Stir until melted and smooth.
- Drizzle the melted chocolate on top of the clusters, followed by the desiccated coconut, and then more chocolate.
- Place in the fridge for 30 minutes until set.
- Remove from the muffin moulds and serve at room temperature. Enjoy!
