Pumpkin & Mascarpone Risotto - with Pepitas & Baby Kale

Anyone in the mood for comfort food? Roast pumpkin gets cosy with silky mascarpone, plus the added benefit of baby kale to do you good. Eat it on the couch or dress it up for a grown-up dinner party. It's tops either way.

 

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Preheat oven to 200 degrees. Cut skin from pumpkin, removing seeds and dice into rough 1.5cm cubes. Add to a baking tray lined with baking paper, drizzle olive oil, season with salt and pepper and toss well. Cook in the oven for approx. 15 mins until soft. In a medium size pot, bring the stock to the boil. Remove from heat and set aside.

    2. Finely chop leek and garlic. Remove thyme from stems and roughly chop. In a large size pot on a medium-high heat, drizzle oil olive and add the leek, garlic and thyme. Cook for approx. 5 mins until golden.

    3. Add Arborio rice and cook for 2 mins then add the tomato paste. Start adding 1 cup of stock at a time, pouring whilst stirring in. Once the liquid has absorbed by at least half, add the next cup and one more cup after that, stirring each cup in. When adding the final cup, add the pumpkin from the oven and stir in, making sure the rice isn’t sticking to the bottom.

    4. Grate parmesan cheese. Reduce heat to low, add in mascarpone and most of the parmesan cheese (leaving a small handful for garnish) and keep stirring for approx. 5 mins. Check rice to ensure it is al dente then remove from heat.

    5. In a baking tray, place pumpkin seeds and toast in the oven for 4 mins only, ensuring they do not burn. Set aside. Cut roots off the salad kale. In a hot frying pan on a high heat, drizzle olive oil and sauté for approx. 2 mins.

    6. Before serving, check the consistency of risotto. If it is too thick, pour in some boiling water and stir through until the consistency is runnier. Serve risotto with salad kale, pepitas and freshly grated parmesan on top. Consume within 48 hrs.
