Do you need a hug? True, this easy vegetarian gnocchi has no arms, but it’s not a bad substitute. Mushrooms, asparagus, sage and spinach are being swaddled in parmesan cream. You can dress it up for company, or take it straight to the couch. We get it.

 

COOKING INSTRUCTIONS

    1. Give all your vegies a little wash. Bring a large pot of salted water to the boil. Peel and roughly chop the onion and crush the garlic. Place a large frying pan on high heat. When hot, drizzle olive oil and cook the onion and garlic for approx. 2 mins to soften. Finely chop the sage and add to the pan.

    2. Cut the mushrooms in half then into ½ cm slices. Add to the pan, drizzle a little more olive oil and cook for approx. 3 mins to brown. Season with salt and pepper.

    3. Add the cream to the pan and bring to the boil, then add the parmesan (reserving some for garnish) and cook for approx. 2 mins while stirring occasionally. Reduce heat to medium. Remove the hard ends from the asparagus then blanch the asparagus in boiling water for approx. 2 mins.

    4. Using a pair of tongs, remove the asparagus. On a chopping board, finely slice then add to the mushroom cream sauce.

    5. Place gnocchi in the boiling water and cook for approx. 2 mins or until they rise to the surface. Drain and add to the mushrooms. Add the spinach leaves to the pot. Hand-squeeze over the juice of half a lemon then mix through.

    6. Serve and finish with remaining parmesan, pepper and a squeeze of lemon. Consume within 48 hrs.
