These are not the sausages and spuds your mum used to make ... these are  some grown up bangers and mash! Think caramelised onions, roasted toms, cheeky chestnuts and greens. See? You are looking after yourself.

 

COOKING INSTRUCTIONS

    1. Give your all your vegies a little wash. Preheat the oven to 200°C. Wash and peel the potatoes then cut them into rough 2cm chunks. Place in another pot, add salt and fill with cold water. Bring to the boil, reduce heat to medium low and cook for approx. 20 mins until very soft.

    2. Cut the Spanish onion in half, then into thin wedges. On a baking tray lined with baking paper, add the cut the Spanish onion and tomatoes, then drizzle with olive oil and half of the balsamic vinegar. Cook in for oven from approx. 15 mins until soft and caramelised.

    3. Finely slice the brown onion, pick thyme leaves and roughly chop the chestnuts. In a small saucepan on high heat, drizzle olive oil and add the onion, thyme and chestnuts. Cook for approx. 5 mins while stirring frequently. Add the remaining balsamic vinegar and a pinch of salt, reduce heat to low and cook for approx. 10 mins, stirring occasionally until caramelised.

    4. Bring a medium size pot of salted water to the boil. Remove the hard ends from the broccolini. In a hot frying pan on medium high heat, drizzle olive oil and cook sausages for approx. 10 mins until golden and cooked through. Add caramelised onion to pan and mix through to keep warm.

    5. Drain the potatoes then add back to the same pot. Pour in the milk and butter, season with salt and pepper. Mash using potato masher or fork until smooth.

    6. Blanch the broccolini in boiling water for approx. 3 mins. Drain and refresh under cold water. Plate potato mash with caramelised onions, roasted tomatoes, broccolini and sausages. Consume within 48 hrs.
