Overnight Oats with Fresh Figs
Overnight oats are a fantastic healthy brekkie and quick to grab as your running out the door as they're made the night before. Add chia seeds if you like or mix up the nuts depending on what you have in the pantry.
INGREDIENTS
- 2 cup rolled oats
- 2 cup almond milk (substitute with any nut or dairy milk)
- ¼ teaspoon vanilla powder (or 1 teaspoon vanilla essence)
- 2 tbsp honey
- 2 tbsp softened almond nut butter (substitute with coconut butter or leave out)
Fig compote:
- 4 figs (skin removed, roughly chopped)
- ¼ cup strawberries (roughly chopped)
- 1 tbsp caster sugar
To serve:
- 2 fresh figs (sliced)
- 2 dollops of yogurt
- 1 tbsp flaked almonds
METHOD
- Combine the rolled oats, vanilla, almond butter, honey and almond milk in a sealed container. Stir to thoroughly combine all ingredients and place in the fridge for 6 hours, preferably overnight.
- To make the fig compote: combine the roughly chopped peeled figs and strawberries in a small saucepan, sprinkle over with the sugar and place on a low heat with the lid placed on. Allow to simmer for 10 minutes until the sugar has dissolved and the fruit has turned into a compote consistency. Take off the heat and allow to cool before serving.
- Press some of the slices of figs to the inside edges of 2 glass tumblers, fill to the ¾ mark with the overnight oats, spoon in a layer of the fig compote, a dollop of yogurt over the top. Press in the remaining slices of figs upright and sprinkle over the flaked almonds.
Serve: 2 large glass tumblers
