Miso Apple Fritters

These apple fritters are filled with warm, spiced Pink Lady apples and finished with a sweet miso glaze - a simple but satisfying combination of caramel, ginger and umami.

Dough

1½ cups plain flour

2 tsp baking powder

½ tsp salt

¼ cup white sugar

2 eggs

½ cup milk
-
2 tsp vanilla extract

Neutral oil, for deep-frying
Spiced Apple Filling

3 Pink Lady apples, peeled and cut into chunks

2 tbsp unsalted butter
-
2 tbsp brown sugar
-
2 tsp ground ginger
-
1 tsp ground cinnamon
Miso Glaze

1½ cups icing sugar

¼ cup hot milk
-
1½ tbsp white miso paste
Method:

Melt the butter in a frying pan over medium heat. Add the apples, brown sugar, ground ginger and cinnamon and cook, stirring occasionally, until softened and lightly caramelised, 8–10 minutes. Set aside to cool completely.

Whisk together the eggs, milk, sugar and vanilla in a large bowl. Stir through the cooled apple mixture. Sift in the flour, baking powder and salt and fold until a thick batter forms - do not overwork.

Pour neutral oil into a heavy-based pot to a depth of approximately 8–10 cm and heat to 180°C. Working in batches, scoop heaped spoonfuls of batter into the oil and fry for 3–4 minutes, turning occasionally, until golden and cooked through. Drain on paper towel.

Whisk the miso paste into the hot milk in a bowl until smooth. Sift in the icing sugar and whisk until a smooth glaze forms. Drizzle over the warm fritters or dip to coat, and serve immediately.
