The Bravo is one of the more distinctive apples on the shelf, and one worth seeking out when it arrives. Deep red, almost burgundy in colour, with a firm crunch and a flavour that is sweeter and more complex than a standard red apple. It is the apple that makes people stop and ask what variety it is.

Bravo apples are at their best from autumn through early winter when they are harvested from cool-climate Western Australian orchards. Their season is relatively short, so buy them when you see them.

Look for apples that are deeply coloured, firm all the way through with no soft spots. The deep red skin is the variety's signature and a good indicator of quality. They keep well in the fridge for weeks.

Eat them fresh to appreciate the full flavour, slice onto a cheese board with aged cheddar, or pack into a lunchbox for something a little different. Their dense, firm flesh also holds up beautifully in a tart.
