Chicken Caesar Salad

Ingredients:
- 3 egg yolks
- 1 tbsp mustard
- 3-4 anchovies
- 2 garlic cloves
- 2 tsp capers
- ½ tsp salt
- ¼ tsp pepper
- 3/4 cup neutral flavour oil
- 1 lemon juice
- 1-2 tbsp warm water
- 1 cup parmesan cheese + extra for topping
- 400g M&J lightly seasoned chicken
- 1-2 baby cos lettuce
- 1 cup croutons
- ½ cup roughly chopped cooked bacon
Method:

Place the egg yolks, mustard, anchovies, garlic, capers, salt and pepper into a food processor or using a stick blender and blitz until thickens for approximately 1 minute.

Slowly start adding the oil while blitzing. Once finished with the oil, add the lemon juice and the parmesan, blitz and slowly add the warm water until you create your desire consistency.

Slightly warm up the chicken (quick zap in the microwave or on a low-medium heat frying pan), slice it into 1cm pieces.

Arrange the salad by adding layers of lettuce, croutons, bacon, chicken and dressing. Top up with extra parmesan cheese and enjoy.
