Nduja is a soft, spreadable salami from Calabria in southern Italy, intensely spiced with Calabrian chilli, deeply porky, and rich with fat that melts on contact with heat. If you've had it at a restaurant and wondered where to buy it, this is the one.

Salumi's nduja is made in Australia using a traditional Calabrian recipe. The heat is real but balanced, building slowly and lingering without overwhelming the underlying flavour of quality pork. The fat content is what makes it special. Spread it cold on bread, or drop a spoonful into a hot pan and watch it dissolve into a deeply flavoured, brick-red oil that coats whatever you're cooking.

Spread thickly onto grilled bread or crackers with a little honey to cut the heat. Stir through a simple tomato sauce and toss with pasta. A little goes a long way. Add to a pizza base before the cheese, use as the fat base for a shakshuka, or melt into scrambled eggs for one of the best breakfasts going. It transforms clams, mussels, and prawns in minutes. A spoonful in a braise changes the whole dish.
