Add butter to 25cm cast iron pan and place in the oven in the preheated oven to brown (this will take about 10 minutes).
In a mixing bowl, stir together blueberries, 1 tbsp sugar, and lemon zest. In another bowl, whisk together flour, sugar, salt, baking powder, ginger powder and milk until combined.
Remove the hot skillet with the melted browned butter from the oven and pour in the batter. Top with the blueberries and bake for 30 minutes or until golden-brown.
Serve warm with a side of whipped cream.
