Back to School lunchbox ideas!

 


Get the kids involved to help make these home made pizza’s loaded with vegetables in every colour of the rainbow.

For an extra healthy option, the base can be made using a cauliflower pizza base.

INGREDIENTS:

  • ¼ red onion diced

  • ½ punnet of red snacking tomatoes

  • ¼ orange capsicum

  • Corn kernels of ½ cob

  • ¼ cup broccoli cut into little trees

  • ¼ green capsicum

  • 1 gluten free pizza base

  • ½ cheddar cheese grated

  

METHOD:

  •  Pre heat the oven to 200°.

  • Place the pizza base on a round baking tray lined with baking paper. Sprinkle the grated cheese over the gluten free pizza base.

  • Starting around the outside, sprinkle the finally diced red onion to create a purple outer board.

  • Follow this by adding in a row of snacking tomatoes cut in half, a row of orange capsicum, a row of yellow corn kernels, a row of broccoli and finishing with diced green capsicum in the centre.

  • Bake in the oven for 20-25 minutes or until the cheese has melted and the vegetables are starting to brown.

  • Let cool down and then store in an airtight tupperware in your fridge.

 

Serve: 1 medium round pizza

Cook / prep time: 35 minutes

 

For the colourful rice rolls: 

Bring out whatever veg you have in the fridge, thinly slice it and wrap it up in rice paper! (Note: in our version, we didn't use rice or rice noodles!)

For the Pin Wheel sandwiches: 

Fill your wrap base with whatever filling your child enjoys most (in ours, we used turkey, lettuce, thinly sliced cucumber and cheese). Roll it and cut into bite sized chunks!

For the Vegetable bugs: 

Fill celery sticks with hummus for a savoy option, or peanut butter for a fruit option. You can get creative; involve your kids! 

For the Apple star sandwiches:

Cut apple into even rounds, use a star cookie cutter to remove the centre pip area and to create star shaped pattern. Fill with Peanut Butter if allowed at your kids school, or if not, Sunflower Seed Butter, and use another slice of apple to secure as a sandwich. 

N.B: Swap out the Peanut Butter for Sunflower Seed butter, or remove it all together; the star apples taste just as great sans filling! To make your own Sunflower Seed butter, simply follow this simple recipe by clicking here. 

For the Dinosaur and Frog sandwiches: 

Use cookie cutters to cut out bread shapes for a fun turkey and cheese sandwich! Use scattered toms as a dinosaur egg base!
