How to Cook Perfect Wagyu
Wagyu is rich, tender, and way more approachable than it looks. A few simple steps are all you need to get that beautiful crust and buttery bite at home.

Darling Downs Wagyu comes from the wide-open rangelands of Northern Australia, where cattle live out on country and develop that signature depth of flavour and fine marbling.
It’s the kind of beef you can keep simple - and let the quality do the talking.


Wagyu wisdom (the easy wins)
Take it out of the fridge 20–30 minutes before cooking. Even cooking = better crust.
Moisture steams the steak. Dry surface = proper caramelisation.
A good sprinkle of flaky sea salt before and after is often all you need.
Thin cuts: quick sear. Thick cuts: sear, then finish on lower heat.
Wagyu shines at rare to medium-rare. Aim around 54–55°C for medium-rare.
Rest 5–7 minutes, then slice against the grain for max tenderness.

Quick, punchy, and perfect for sharing. Keep the Wagyu cooking fast and the toppings fresh.
Simplified Method:
- Bring Wagyu to room temp, pat dry, season with salt.
- Sear in a very hot pan quickly, then rest 5 minutes.
- Warm tortillas and prep your fresh salsa/toppings.
- Slice Wagyu against the grain, pile into tortillas, finish with extra salt and a squeeze of lime.

Simplified Method:
- Cut Wagyu into even pieces and season simply with salt.
- Thread onto skewers and grill over high heat until caramelised.
- Rest a few minutes so the juices settle.
- Spoon over nahm jim right before serving for that fresh, zippy finish.
Tip: Wagyu is rich - smaller portions go a long way. Keep sides simple and let the steak be the hero.
