How to Cook Perfect Wagyu

Wagyu is rich, tender, and way more approachable than it looks. A few simple steps are all you need to get that beautiful crust and buttery bite at home.

Wagyu wisdom (the easy wins)


Bring to room temp

Take it out of the fridge 20–30 minutes before cooking. Even cooking = better crust.

Pat it dry

Moisture steams the steak. Dry surface = proper caramelisation.

Season simply

A good sprinkle of flaky sea salt before and after is often all you need.

Fast + hot, or gentle finish

Thin cuts: quick sear. Thick cuts: sear, then finish on lower heat.

Watch the temp

Wagyu shines at rare to medium-rare. Aim around 54–55°C for medium-rare.

Rest + slice right

Rest 5–7 minutes, then slice against the grain for max tenderness.

Quick, punchy, and perfect for sharing. Keep the Wagyu cooking fast and the toppings fresh.

Simplified Method:

  1. Bring Wagyu to room temp, pat dry, season with salt.
  2. Sear in a very hot pan quickly, then rest 5 minutes.
  3. Warm tortillas and prep your fresh salsa/toppings.
  4. Slice Wagyu against the grain, pile into tortillas, finish with extra salt and a squeeze of lime.

Simplified Method:

  1. Cut Wagyu into even pieces and season simply with salt.
  2. Thread onto skewers and grill over high heat until caramelised.
  3. Rest a few minutes so the juices settle.
  4. Spoon over nahm jim right before serving for that fresh, zippy finish.
