Teff: A small grain doing big things

What is teff?

Teff is a small Ancient Ethiopian grain with benefits that far outweigh its size.

Teff is gluten free and comes in both grain and flour form, with a delicious nutty flavour that makes it perfect for breakfast, lunch, dinner and all the snacks in between.

You can literally whiz it, bake it, boil it, sprinkle it – the only limit is your imagination.

It’s easy to see why this tiny grain is being hailed as the superfood you need to know about. 

Nutritional benefits

It may be the smallest grain in the world, but teff packs a significant nutritional punch. High in calcium, iron, protein, fibre and magnesium, it’s also a great source of resistant starch, low GI and naturally gluten free. When it comes to nutritional benefits, teff leads all the grains.

One 100g serving of teff provides:

  • 24% RDI of protein – teff is an excellent source of plant protein with a great combination of eight essential amino acids needed for the body’s growth and repair
  • 29% RDI dietary fibre – being low GI and a resistant starch, teff can aid weight loss, help lower cholesterol and control blood sugar levels and aid digestion
  • 40% RDI iron – especially critical for women, iron is essential for healthy blood, brain development and a well-functioning immune system
  • 14% RDI calcium – the highest in any grain, helping to strengthen our bones and is a great alternative calcium source for those who can’t consume dairy
  • 42% RDI magnesium and many other essential minerals.

In short, it’s a nutritional powerhouse. But most importantly, it’s delicious.

So how do you get all of this goodness?

It would be quicker to list the ways you can’t. Teff is renowned for its versatility in the kitchen.

Teff can boiled whole to use as a quinoa or rice substitute, it can be made into a porridge for breakfast, or pancakes using our flour. It can be baked in a cake, served with a salad, and made into bread.

Put simply, teff can replace any flour or grain in a recipe as its light nutty flavour works well from sweets through to savoury.

With this much versatility, the only limit is your imagination.
