Stracciatella is the luscious, creamy filling inside burrata. Pulled strands of fresh mozzarella soaked in rich cream until they become something entirely their own. Paesanella make theirs in Sydney using Australian milk, and the result is genuinely one of the finest fresh cheeses in the country.

The texture is what sets it apart. Loose, silky, almost pourable, with delicate milky threads running through thick cream. The flavour is fresh and clean with a subtle sweetness that plays beautifully against acidity, richness, and heat.

Spoon straight from the tub onto toasted sourdough with a drizzle of good olive oil and flaked salt. Serve alongside ripe tomatoes and basil for a deconstructed caprese that lets the cheese do the work. Stir through freshly cooked pasta just before serving for a sauce that coats every strand. Finish a pizza straight from the oven. Spoon onto a bruschetta, a flatbread, or a grain bowl. It belongs almost everywhere.

Bring to room temperature for 15 minutes before serving for the best flavour and texture. Use within a day or two of opening.
