Technical & Tasting Notes
VITICULTURE
The fruit was hand-picked at 10.5 Baumé.
WINE MAKING
Cold pressed, free run juice was fermented in stainless steel tanks, with lees stirring three times a week. The wine was then aged on its lees for seven months. Finally, the Charmat method was used to conduct secondary fermentation.
TASTING NOTES
We’ve produced a dry style of Prosecco, which is both delicate and textural. There is crisp & lively green apple and citrus notes on the nose. The palate explodes with citrus fruit and is then followed by a long line of zingy, citrussy acidity that carries the flavours along onto the finish. This is a perfectly delicate and elegant aperitif.
