Look for kumera that feels firm and heavy with no soft spots or mould. Imperfect kumera may be oddly shaped but cook and eat identically to full-grade. Store in a cool, dark, well-ventilated spot and use within two weeks. Don't refrigerate.
Roast in wedges until caramelised, mash with butter and a pinch of cinnamon, dice into a salad with feta and rocket, or use as a filling for fritters or pies.
