Passionfruit Panama Each is a large variety with thick skin that protects intensely fragrant, tart-sweet pulp inside. More flesh per fruit than a standard passionfruit and every bit as aromatic.
Look for fruit that feels heavy for its size — that's the sign of good pulp content. The skin will wrinkle as it ripens, which is perfectly normal and signals peak flavour. Store at room temperature to ripen, then refrigerate.
Scoop the pulp over pavlova or yoghurt, stir into a butter or curd for tarts, blend into a cocktail or mocktail, or spoon straight from the skin over vanilla ice cream.
