Look for capsicums that feel firm and heavy with no soft spots or wrinkling. Imperfect capsicums may be oddly shaped or have minor blemishes but roast, stuff and eat identically to full-grade. Store in the fridge crisper and use within a week.
Roast whole until the skin blisters and the flesh sweetens, slice raw into a salad or crudité platter, stuff with rice and mince, or blitz into a romesco sauce.
