A whole seedless watermelon is one of the great summer centrepieces. Sweet, deeply red-fleshed, and refreshing in a way nothing else quite matches when the weather is at its hottest. Seedless means no interruptions, just clean slices from end to end.
Watermelons are at their best in the height of summer from December through February when the heat drives the sugar content to its peak. That is the time to buy them whole and make an occasion of it.
Look for watermelons that feel heavy for their size and have a creamy yellow patch on one side where they rested on the ground, which indicates good sun exposure and sweetness. A hollow sound when tapped is a good sign. Avoid any with very soft spots.
Slice into wedges and eat cold, cube into a fruit salad, blend into an agua fresca, or pair with feta, mint, and a splash of lime for a classic summer salad.
