Watermelons are at their best in the height of summer when the heat pushes the sugar content to its peak. Look for cut watermelon with deep red, firm flesh and no white streaking through the centre, which can indicate the melon was picked before it was ready.
Slice it into wedges and eat it cold straight from the fridge, cube it into a fruit salad, blend it into an agua fresca, or pair it with feta and mint for a classic summer salad.
