Lime Each

The lime is one of the great citrus fruits, and a squeeze of fresh lime lifts a dish in a way nothing else quite replicates. Brighter and more aromatic than lemon, with a sharpness that cuts through rich flavours and brings everything into focus.

Limes are available year-round, but they are at their juiciest and most affordable in summer when supply is at its peak. That is when they are worth keeping in abundance.

Look for limes that are firm, deeply green, and heavy for their size. A heavy lime has more juice. Avoid any that have started to yellow or feel light, as the juice content drops off quickly once they begin to turn.

Squeeze over tacos, stir through curries and laksa, mix into guacamole, press into a cocktail, or zest over a slice of key lime pie. Keep a bowl of them on the bench and you will reach for them every single day.
