Valencia oranges are the juicing orange. Thinner-skinned and higher in juice than navels, they are the variety behind every great glass of fresh orange juice. Sweet, slightly tart, and incredibly fragrant when squeezed, they make the navel look understated by comparison.
Valencia oranges are at their best from late spring through summer, typically from October through January, which is actually the opposite season to navel oranges. That makes them the summer juicing orange of choice when navels have finished.
Look for Valencias that feel heavy for their size with firm, smooth skin. A slightly greenish tinge on the skin is completely normal for Valencia oranges and does not affect the flavour. Avoid any that feel light or have started to wrinkle.
Juice them fresh in the morning, use in dressings and marinades, or zest into baked goods. They also eat well out of hand, with a flavour that is more complex than a navel.
