Imperial mandarins are at their best from April through to mid-May when the new season fruit is at peak sweetness and the segments are full of juice. That is the time to buy them by the bag.
Look for mandarins that feel heavy for their size and have firm, smooth skin with a deep orange colour. A little puffiness in the skin is normal. Avoid any that feel very light or have soft, watery spots, which indicate they have dried out inside.
Eat them fresh as a snack, segment them over a salad, squeeze them into a dressing, or zest the peel into a cake batter. One of the best fruits for keeping in a fruit bowl at the office.
