Look for heads with tight, dark green florets and no yellowing. Broccoli is available year-round and keeps in the fridge crisper for up to four days. The stem is fully edible — peel the outer skin and slice it into the dish.
Roast with olive oil and garlic until the edges char and crisp, steam briefly and finish with lemon and butter, stir-fry with ginger and oyster sauce, or shave raw into a salad with almonds and parmesan.
