Gai Lan Bunch is Chinese broccoli — firm, dark green stems with broad leaves and a slightly bitter, robust flavour that's more complex than regular broccoli. A staple of Cantonese cooking that's equally at home in a home kitchen.
Look for firm, bright green stems with tight buds and no yellowing leaves. Gai lan is available year-round and keeps in the fridge crisper for up to four days. The stems take slightly longer to cook than the leaves, so add them first.
Blanch and drizzle with oyster sauce and sesame oil, stir-fry with garlic and ginger, add to a clay pot or braise, or serve alongside roast duck or crispy pork.
