Blend straight from the tin with roasted chillies, garlic, onion and coriander for a salsa verde that works on everything from tacos and enchiladas to scrambled eggs and grilled chicken. Simmer into a braising liquid for pork or chicken for a proper Mexican green mole. Stir through a pot of chilli for acidity and depth. Use cold as a base for guacamole or as a dressing thinned with a little oil.
