Tomatillos are the backbone of salsa verde and the reason green Mexican sauces taste the way they do. Small, tart, and faintly herbal, they have a flavour that is brighter and more acidic than tomato, with a firmness that holds up beautifully in both raw and cooked applications. Latin Deli's whole tomatillos come ready in the tin, husked and in their own liquid, which saves real time in the kitchen.

Blend straight from the tin with roasted chillies, garlic, onion and coriander for a salsa verde that works on everything from tacos and enchiladas to scrambled eggs and grilled chicken. Simmer into a braising liquid for pork or chicken for a proper Mexican green mole. Stir through a pot of chilli for acidity and depth. Use cold as a base for guacamole or as a dressing thinned with a little oil.
