Peach Yellow Each is the classic summer stone fruit — golden skin blushed with red, juicy orange-yellow flesh and a sweet, fragrant flavour that's hard to improve on. A ripe yellow peach at its peak is one of the best things summer produces.
Look for peaches that give slightly under gentle pressure near the stem with a strong, sweet fragrance. Yellow peaches are at their best from November through March. Ripen at room temperature and refrigerate once ready — eat within a day or two.
Eat fresh out of hand, halve and grill until caramelised, slice into a summer salad with burrata and prosciutto, or bake into a tart, crumble or cake.
