Look for halves with deep, evenly coloured flesh and no browning at the edges. A half papaya should be used on the day of purchase — wrap tightly and refrigerate if not eating immediately, and consume within 24 hours.
Squeeze fresh lime juice over the flesh and eat straight from the skin, cube into a fruit salad, blend into a tropical smoothie, or scoop and serve alongside yoghurt and toasted coconut.
