Potato Kestrel is a distinctive variety with creamy yellow flesh, a smooth waxy texture and a rich, buttery flavour that doesn't need much dressing up. Recognisable by its cream skin with purple-tinged eyes.
Choose potatoes that are firm and heavy with no sprouting or greening. Kestrel is a versatile, all-purpose potato that performs well boiled, roasted or baked. Store in a cool, dark, ventilated spot and use within two weeks.
Boil and serve with butter and herbs, roast whole until golden and crispy-skinned, slice into a layered gratin, or mash for a rich, flavourful side dish.
