Carrot Dutch Bunch brings slender, young Dutch carrots still in the bunch — sweeter and more tender than full-grown varieties, with their feathery tops still attached as a sign of freshness. A beautiful ingredient as well as a practical one.
Look for firm, brightly coloured roots with fresh, green tops. Dutch carrots keep well in the fridge crisper for up to a week — remove the tops before storing to prevent moisture loss. Scrub rather than peel to keep the nutrients close to the skin.
Roast whole with honey and thyme until caramelised, steam briefly and finish with brown butter and herbs, serve raw on a crudité platter, or use as a striking side alongside roasted meats.
