Look for peaches that give slightly under gentle pressure with a strong, sweet fragrance. White peaches are more perishable than yellow varieties — handle gently and eat within a day or two of ripening. A summer fruit from December through February.
Eat fresh on its own to appreciate the delicate flavour, slice onto a cheese board with burrata or mascarpone, use in a Bellini or fruit cocktail, or fan over a tart with almond cream.
