Look for pears that give very slightly near the neck — the reliable sign of ripeness. Corella is a cool-season variety at its best in autumn and winter. Once ripe, refrigerate and eat within a couple of days.
Eat fresh out of hand, slice onto a cheese board with brie or camembert, poach in white wine and star anise, or fan over a tart with almond cream.
