Look for passionfruits that are heavy for their size with wrinkled, dimpled skin. The more wrinkled, the better the flavour. A smooth, plump skin indicates underripeness. Avoid any that feel very light, as the pulp has dried out.
Spoon the pulp over pavlova, stir through yoghurt, swirl through cheesecake, blend into a dressing, or squeeze over a slice of sponge. At this price per fruit, use them generously.
