Choose pears that yield very slightly near the neck — that's the sign they're ready to eat. Piqa Boo is a seasonal variety, typically at its best in autumn and winter. Once ripe, store in the fridge and eat within a few days.
Eat fresh out of hand, slice onto a cheese board with blue cheese or brie, poach in spiced red wine, or fan over a tart with almond cream.
