Look for bright, feathery fronds with no yellowing or wilting. Fresh dill is delicate and best used within a few days of purchase — store loosely wrapped in a damp paper towel in the fridge to extend its life. Don't cook it hard; add at the end to preserve the flavour.
Fold through a smoked salmon or gravlax dish, stir into a cucumber and yoghurt salad, use as a garnish on borscht or potato soup, or mix into a butter or cream cheese for spreading.
