Look for husks that are still green and moist, with silks that haven't fully dried out. Fresh corn is sweetest in summer when supply is at its peak. Strip the husk just before cooking and eat on the day of purchase for the best flavour.
Boil or steam and serve with butter and salt, char whole on the barbecue, slice the kernels off for a salad or salsa, or fold through a fritter or cornbread batter.
