The region's pure rainfall, mineral-rich grasses and cold ocean winds produce beef with exceptional marbling and a clean, grass-fed flavour that is noticeably different to grain-finished alternatives.
Scotch fillet (ribeye) is the natural choice to showcase Cape Grim beef. The cut is well-marbled and tender, with the fat rendering beautifully at high heat. Cook in a screaming hot pan or over coals, season generously with salt, cook to medium-rare, and rest before serving.
