Imperfect Apple Stuffing

 

No matter what the shape of your lumpy apple, it's going to be perfect for this delicious stuffing recipe. Ideal for a chicken or turkey or as a bread salad for roasted pork. With the added benefit of reducing food waste, helping the Aussie farmers and saving your pennies.

Ingredients

    • 1 lumpy apple
    • 1 white onion finely diced
    • 1 clove of garlic
    • 2 cups for stale sourdough breadcrumbs
    • 1 bunch sage
    • 10 walnuts
    • Splash of white wine
    • Long pour of olive oil
    • Knob of butter

    Method

    1. Start by finely slicing onion and garlic. IN a deep pan fry onion and garlic in a generous amount of olive oil and a knob of butter. Add salt and pepper to onions. When onions are translucent add chopped sage, fry for 15 seconds, then add apple, then add breadcrumbs, splash of wine and more olive oil if it looks too dry. Taste for seasoning.
    2. Use to stuff the cavity of the roasting bird. Rub the skin of the bird with olive oil pepper and salt and roast for approx 1 hour (for a 1.6 Kg chicken) or until juices run clear when chicken thigh is pierced with a skewer.
