Place the egg, butter milk and vanilla extract in a mixing bowl and whisk until combined.
Slowly add the dry ingredients to the wet ingredients while whisking until combined into a batter.
Melt the 2 tbsp of butter and add to the batter. Mix well and set aside.
Bring a medium size frying pan to medium heat and add1 tsp of butter. Let it melt and once bubbling add ¼ cup of the batter into the pan. Let it cook for 2-3mins until golden brown on the bottom and little bubbles appear on the top.
Carefully turnover using a spatula and cook for further 2 mins. Repeat with the rest of the batter.
Serve warm with butter, maple syrup banana slices and blueberries.
Tips:
You can also serve the pancakes with mixed berries, a squeeze of lemon juice or even dust them with icing sugar and cinnamon if desired.
If you don't have any butter milk you can use milk.
