Autumnal Salad

This delicious and easy to make Autumn salad by Nadia Felsch incorporates seasonal apples and walnuts to bring you a fresh, crispy meal in just 20 minutes!

Ingredients

Creamy Dressing

Method

  1. Put small fry pan on medium-high heat
  2. Once hot, add walnuts and shake around for a few minutes until toasted
  3.  Remove from heat, chop roughly, set aside
  4. Crack egg into a bowl or base container of an immersion blender
  5. Add oil and remaining dressing ingredients
  6. Blend for 20-30 seconds non-stop with immersion blender
  7. Makes 1 cup and can be stored in an airtight container in the fridge for one week
  8. Combine all salad ingredients in a large mixing bowl
  9. Add ½ cup creamy dressing and coat well
  10. Divide between plates and serve
